Our Story
In 2007, Enza Giardina, a renowned Australian Naturopath, Herbalist, and author, discovered the wonders of konnyaku noodles, or shirataki, a staple enjoyed in Japan and China for over 1,400 years.
Derived from the Konjac plant, these extraordinary noodles are composed of 97% water and 3% soluble fiber (glucomannan), with a dash of natural calcium additive to maintain their shape. Simple, yet remarkable!
Recognizing the immense health benefits of this plant-based delicacy, and understanding its potential positive impact on her patients’ health, Enza, with the support of her family, founded ZERO Noodles in 2011.
ZERO Noodles quickly garnered praise from fellow Australian Naturopaths, Doctors, and Dieticians. Featured in prominent Australian publications like Health & Wellbeing, Living Now, InnerSelf, and Nexus, the company experienced growth, expanding its product line to include Rice, Fettuccini, and Lasagna-style offerings.
Today, we proudly offer products that align with our customers’ health objectives, making healthy eating not only accessible and guilt-free but also utterly delicious. All our products bear the Australian certified organic seal, and are non-GMO, vegan, and grain-free.

Meet Our Founder
With a rich background in Naturopathy and deep roots in Italian heritage, Enza Giardina has always been fascinated by Konjac (Shirataki). She saw it as a delightful, healthy alternative to traditional noodles, rice, and pasta. In 2011, Enza and her supportive family took the plunge to make these miraculous products available to the residents of Australia and New Zealand.
As filmmaker Federico Fellini aptly put it, “Life is a combination of magic and pasta.” At ZERO Noodles, we provide the finest substitutes for pasta, rice, and noodles, ensuring that individuals with dietary challenges can also savor the sweet life, or as the Italians say, “La Dolce Vita.” - Enza Giardina
